2022 Cabernet Sauvignon has Been Bottled!

Sanitizing EVERYTHING;

it’s a process, and Dave takes each step very seriously!

This batch yielded 21 and 1/2 bottles of wine…Of course, we taste tested the 1/2 bottle and decided what we will tweak to improve this blend the next time around!

A little elbow grease is needed to cork the bottles with this tool! Although he seems to enjoy it, eventually, we may be able to afford a machine that can tackle this job with a bit more ease and efficiency.

Did you know? In the 1630’s, stoppers were made of oil cloth, pieces of wood, and glass? Around the middle of the century, stoppers started to be made of cork - being cheaper to manufacture than glass and making a tighter seal. But an added benefit was also discovered; a well fitted cork, by allowing little more than a milligram of oxygen into the bottle per annum, removed the sulphites added in the bottling process, slowed down the oxidation process and allowed the wine to age and develop secondary aromas!

This is a semi-dry, medium bodied blend, with dark fruit flavors and peppery notes that are smooth and easy on the finish! A perfect partner for any cut of steak, rack of lamb, or pepper-crusted ahi tuna.

Meatless Pairings: Grilled vegetables, including portobella mushrooms and eggplant

Cheese Pairings: Aged cheddar, gorgonzola, or gouda

Dessert Pairings: Blackberry cobbler, black forest cake, or any dark chocolate treat

Not for sale yet as we still have quite a bit of growing to do. However, there will be tastings along the way with our friends and family as we work toward an official product launch at our vineyard! Baby steps!
